Trader Joe’s Thai Red Curry Sauce as a Marinade! July 6, 2008

Tonight I made Red Curry Chicken using TJ’s Thai Red Curry Sauce. I started by marinading chicken for 48 hours in the red curry sauce along with a generous helping of seasoned pepper…

The grill in our pool area was missing the propane tank so I used the George Foreman Grill to cook it up.. The GF did a great job.. I used the Medium setting for 7 minutes.. grilling 5 chicken breast pieces each time.

Once the chicken was cooked I added it to the rest of the thai red curry sauce which was heating on the stove…

After 5 minutes the sauce was warm and ready to pour over rice… I used Basmati tonight.. It was delicious!

For dessert I had a fresh cut cantelope with a sprinkle of salt.. is the sprinkled salt a southern thing? I think so..

Potato Soup in the Blender! May 22, 2008

I just finished my first batch of soup in my Blender.

I got all of the ingredients from Trader Joe’s:

I boiled the onion and potatoes then moved them to the blender with some vegetable broth and seasoned to taste..  then repeated until I was out of boiled ingredients.

When I hit the “SOUP” button, the man inside the blender started whipping all 3 horses and turned my boiled potatoes into lump-free soup.. The consistency is good, but I need to work on the flavor.. it’s “almost there”… :D

1 Ripe Navel Orange

4 oz Trader Joes Vanilla Yogurt

2 fists of ice

1 blendtec blender :)

 Low fat, low sugar beverage… delicious.

Pesto & Mushroom Tortellini with Roasted Red Pepper Alfredo September 28, 2007

1/2 lb pesto stuffed tortellini cooked together with 1/2 lb Mushroom stuffed tortellini added to “the sauce”

“the sauce”  = 3 huge scoops Roasteed Red Pepper Spread (with garlic & eggplant) mixed with 1 jar Trader Joes alfredo sauce. 

Salt/pepper/season to taste..

Total Cost: $6ish

Actually, none of these are outstanding alone but with their powers combined (to quote a late 80′s cartoon) it’s awesome!
